I know, it might sound a little strange to be making chili this time of year, but this time of year I make a final batch of chili to get us through the summer.
I make a batch and then freeze it in smaller baggies to use over the Summer for the following:
*Chili dogs (hot dogs with chili and shredded cheese on top)
*Baked potatoes with chili and cheese
*A quick dish for potluck gatherings - add chili and Rotel to melted Velveeta for a chip dip
*Or if you are up for it, just a nice reheated bowl of chili!
So grab your favorite Chili recipe, get it cooking and then portion out to throw some in your freezer for easy cooking this summer!
If you don't have a fave recipe, here's the simple one I use (and adapted from my Mom's recipe)!
This is a double batch, so if you don't need as much you can divide it in half.
What you will need:
2 lb ground hamburger - cooked
2 cans stewed tomatoes (I used 2 jars home canned tomatoes)
1 can rotel
2 cans chili beans
Cumin 2 tsp
Chili Powder 2 tsp
What you will need to do:
Blend together stewed tomatoes, cumin and chili powder until smooth.
Combine with cooked hamburger, beans and rotel. Heat through completely.
