I had purchased some bananas awhile ago with full intensions of making banana bread and freezing some as well, but decided to step outside my comfort zone and try something new. I am fully glad that I did because the Banana Crumb Muffins I ended up making were a huge hit with the family. When I asked my 5 year old daughter if she liked them, all she could do was lick her lips over and over and smile at me. Apparently they were so good they took her words away, which doesn't happen often!
I made a double batch of the Banana Crumb Muffins and it made 12 regular size muffins and 54 mini muffins. And I must state, 2 batches and none of them made it to the freezer!
I hope you enjoy this easy to make recipe as well. Being able to make food items ahead of time and freeze them can help save time and money in the long run. Banana Crumb Muffins:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 bananas, mashed
- 3/4 cup white sugar
- 1 egg, lightly beaten
- 1/3 cup butter, melted
- 1/3 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon butter
Directions
- Preheat oven to 375 degrees. Lightly grease 12 muffin cups, or line with liners
- In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
- In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter. Sprinkle topping over muffins.
Bake 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

And I have stuck things like this in Easter baskets before, kids love it!

If you haven't tried Peachwave yet, this is a great way to do it! This is one of our favorite spots in Sioux Falls. The kids love picking out the different flavors of frozen yogurt and adding a few yummy toppings to it. A trip to Peachwave is a super treat for them! And I have to be quite honest I am happy when they want to go their 'cause it's one of my favoritie places AND I know it is healthier than other choices.

MasterLock contacted me to ask me if I might like to review the 1534D Password Lock and I was excited to do so, since they would also be sharing one with one of my lucky readers! Did you grab the $3/1 Zevia coupon I posted about here (no longer available)? If so, there is a sweet deal this month at HyVee. The Health Market ad shows the Zevia 6 pk on sale this month for $3.99, so just $.99 after coupon!
I've always dreamed of an area inside the front door that is large enough for a bench and hooks/cubbies for the kids. Well, the space in our house does not allow for a bench, so that was out. And if I were to hang hooks near the door, they would have to be placed up too high, out of the reach of the kids so that simply defeated the purpose.
After some thought, I was able to come up with a reasonable solution to compromise and, well sort of make my dreams come true! Don't you love those little compromises. We do what we can!
The solution:
I purchased 2 Command Brushed Nickel Finish Large Hooks at Menards when they had them on sale, and yes I used a coupon too!

At the top of the steps of our split-foyer home, is a closet door. I hung the hooks on the outside of the closet door, at a level within reach of the kids. The kids helped with this part. The hooks were super easy to hang and they are made with a beautiful nickel finish, so they look cute even when they are empty!
The kids now hang their backpacks and their coats as soon as they get to the top of the steps. They do look pretty cute when the backpacks and coats are hung on them. And even more importantly, I no longer have random bags or coats laying around the house, hung over my banister or missing from action in the morning when we are getting ready to for school.
The kids know where their items belong and are responsible for putting them away each time we come in the door. The 3 year old thinks it is the coolest thing ever! And it certainly makes this Mommy very happy!
The project cost just around $10 (2 hooks), so I didn't break the bank either! As for the bench, we bring in a foot stool to sit on while putting on and taking off boots so the kiddos don't get wet.
I know it isn't the beautiful picture in my dreams, but it is certainly a functional area and helps the kids take ownership of their items, so I love it! What do you think?! What other ideas do you have?! Share your thoughts and ideas in the comments!
